Berry–pistachio frozen yogurt bark

Plain yogurt, a much better wardrobe.

A little honey, jewel-coloured berries and a satisfyingly good snap. The freezer does the hard part.

Here’s the clever bit.

  1. Make some room

Line a small rimmed tray that fits your freezer with parchment.

  2. Smooth things over

Stir the honey into the yogurt. Spread about 1/4 inch / 6 mm thick; do not stretch it thin just to fill the tray.

  3. Add the colour

Add fruit and pistachios. Press the toppings in lightly.

  4. Let the freezer work

Freeze flat for at least 3 hours, or until fully firm.

  5. The good bit

Peel away the paper and break into pieces. Serve straight from the freezer; it softens quickly. Keep leftovers sealed in the freezer.

A small detail. A better result.

Keep it frozen until you’re ready. This is frozen yogurt—not a chocolate bar—and it softens quickly.
